在寒冷的冬天，沒(méi)有什么比一桌熱氣騰騰的家常菜更能溫暖人心了。這些菜肴不僅能驅(qū)散冬日的寒意，更能讓家人圍坐在一起，共享溫馨的時(shí)光。以下為你帶來(lái)八道適合冬天的家常菜做法，讓家的味道在舌尖上綻放。

一、麻婆豆腐

【食材】

豆腐、肉末、豆瓣醬、蒜末、姜末、干辣椒、花椒粉、生抽

【做法】

1.豆腐切塊焯水2分鐘，加鹽可保持豆腐嫩滑不易碎。

2. 熱鍋炒香肉末，加入豆瓣醬和香料炒出紅油。

3.先倒入適量清澈的清水，接著把水燒開(kāi)，接下來(lái)放入豆腐，再用小火煮3分鐘，讓豆腐充分吸收味道

4.分三次淋入水淀粉勾芡，使湯汁濃稠地包裹著每一塊豆腐。

二、大蔥燒雞

所需食材：三黃雞半只（約700 g）、大蔥白5根、姜片6片、蒜瓣5粒、八角2顆、香葉1片、干辣椒3個(gè)、生抽2勺、老抽半勺、黃酒2勺、冰糖10 g、鹽3 g、熱水適量。

步驟：

1. 雞剁塊，冷水下鍋焯至浮沫析出，撈出用溫水沖凈，徹底去腥。

2. 鑄鐵鍋少油，小火把姜片、蒜瓣、八角、香葉、干辣椒煸到香氣蹦出。

3. 下雞塊，轉(zhuǎn)中火耐心翻炒，逼出皮下油脂，見(jiàn)邊緣微黃即達(dá)標(biāo)。

4. 烹入黃酒，蒸汽升騰時(shí)迅速蓋蓋5秒，讓酒香鉆入纖維；再加生抽、老抽、冰糖翻炒上色。

5. 倒入熱水沒(méi)過(guò)雞肉2 cm，大火煮沸后轉(zhuǎn)小火慢燉15分鐘，讓味道先鉆進(jìn)去。

6. 大蔥白切馬耳段，此時(shí)下鍋，用筷子壓進(jìn)湯汁，繼續(xù)蓋蓋10分鐘，蔥甜與雞鮮交換靈魂。

7. 開(kāi)蓋轉(zhuǎn)中火稍收汁，湯汁能掛勺即關(guān)火，撒少許鹽提味，裝盤(pán)后蔥油閃亮，香味沖鼻。

三、青豆玉米炒雞丁

食材：

雞胸肉、青豆、甜玉米、胡蘿卜、淀粉、生抽、鹽、蔥花、食用油

做法：

1、雞胸肉洗凈切小丁，用少許鹽、1勺生抽、1勺淀粉抓勻腌制15分鐘；青豆、甜玉米提前焯水3分鐘，胡蘿卜切小丁。

2、熱鍋倒油，油熱后下蔥花爆香，倒入腌制好的雞丁，大火快速翻炒至變色盛出。

3、同一口鍋留底油，放入胡蘿卜丁翻炒1分鐘，加入青豆和甜玉米，翻炒2分鐘。

4、倒入炒好的雞丁，加適量鹽、1勺生抽調(diào)味，快速翻拌均勻即可出鍋。

四、三鮮菌菇湯

食材

雞蛋、香菇、海鮮菇、鮮蝦、豆腐、蔥姜

做法

1、大蝦剝殼去頭去蝦線開(kāi)背，香菇洗干凈切片，其他食材也洗干凈備用。

2、鍋里熱油下入雞蛋煎熟切塊，另起鍋蔥姜爆香，下入蝦仁炒至變色

3、倒入香菇和海鮮菇炒至變軟，倒入雞蛋翻炒均勻。

4、是倒入熱水煮5分鐘，再倒入豆腐煮2分鐘，放鹽和白胡椒調(diào)味，最后撒上蔥花即可。

五、香辣牛肉炒油麥菜

食材列表：準(zhǔn)備150克牛肉（切絲）、200克油麥菜（洗凈切段）、2個(gè)干辣椒（切段）、2瓣大蒜（切片）、1湯匙生抽、1茶匙蠔油、1茶匙淀粉、適量鹽和胡椒粉、2湯匙食用油，以及少許芝麻點(diǎn)綴。

制作過(guò)程：

1. 牛肉切絲后用生抽、淀粉和胡椒粉腌制10分鐘。

2. 熱鍋中火加熱至油溫六成熱（約160°C），放入干辣椒和大蒜片爆香20秒。

3. 加入牛肉絲，轉(zhuǎn)大火快速翻炒2-3分鐘至變色。

4. 放入油麥菜段，大火翻炒1-2分鐘，加入蠔油和鹽調(diào)味。

5. 撒上芝麻出鍋，全程約20分鐘。

六、肉沫炒香菜

食材列表： 準(zhǔn)備150克豬絞肉（肥瘦相間的最好）、一大把香菜（約100克）、2個(gè)小米辣、2瓣大蒜、還有生抽、老抽和鹽。

制作過(guò)程：

1. 準(zhǔn)備工作： 香菜洗凈切掉根部，然后切成約2厘米的小段。小米辣和蒜切碎。

2. 煸炒肉沫： 鍋燒熱倒油，放入肉沫，用中火煸炒，用鍋鏟將肉沫劃散，直到炒出油脂且肉沫變得金黃酥香。

3. 注入風(fēng)味： 加入蒜末和小米辣碎，與肉沫一起炒出香味。接著淋入1勺生抽和半勺老抽，給肉沫上色調(diào)味。

4. 加入香菜： 轉(zhuǎn)大火，倒入香菜段，快速翻炒。香菜極易熟，下鍋后翻炒不要超過(guò)20秒，看到香菜變軟即可關(guān)火，根據(jù)口味酌情加鹽，炒勻后立馬盛出，保持其爽脆口感。

七、佛手瓜炒肉片

所需食材：佛手瓜2只（約400g）、豬里脊250g、青紅椒各1只、蒜瓣3粒、姜絲5g、生抽15ml、蠔油10ml、料酒10ml、白胡椒粉1g、玉米淀粉5g、花生油20ml、鹽3g、糖2g。

步驟：

1. 里脊逆紋切2mm薄片，加料酒、生抽5ml、白胡椒粉、淀粉與10ml清水抓黏，封油靜置15分鐘。

2. 佛手瓜對(duì)剖去核，斜刀切柳葉薄片，放淡鹽水泡5分鐘去澀，瀝干后加少許糖腌5分鐘提脆。

3. 青紅椒去籽切塊，蒜拍碎、姜切絲；取小碗兌剩余生抽、蠔油、糖、淀粉與30ml清水成滑汁。

4. 熱鍋滑油，下肉片快速劃散，色變白即盛出，留底油爆香姜蒜，香味一出立刻放佛手瓜。

5. 維持最大火，翻炒40秒讓瓜片邊緣微透明，加入青紅椒繼續(xù)翻炒30秒，斷生即可。

6. 倒回肉片，沿鍋邊淋入滑汁，翻鍋數(shù)下讓芡汁均勻包裹，見(jiàn)光亮即關(guān)火。

7. 起鍋前點(diǎn)幾滴花椒油增香，裝盤(pán)呈山形，趁熱食用，瓜片仍帶“咔嚓”聲最佳。

所需食材：牛腩500克、番茄2個(gè)、腐竹100克、洋蔥半個(gè)、生姜1塊、大蒜3瓣、八角2個(gè)、桂皮1小塊、香葉2片、鹽適量、生抽2勺、老抽1勺、料酒2勺、冰糖適量、食用油適量。

步驟：

1. 牛腩洗凈，切成大小均勻的方塊，放入清水中浸泡1 - 2小時(shí)，期間換水2 - 3次，以泡出牛腩中的血水，然后撈出瀝干水分。

2. 番茄頂部劃十字刀，放入開(kāi)水中燙1 - 2分鐘，撈出后去皮，切成小塊；腐竹用溫水泡軟，切成段；洋蔥切成小塊；生姜切片；大蒜切末。

3. 鍋中倒入適量清水，放入牛腩塊，加入1勺料酒，大火燒開(kāi)后撇去浮沫，撈出牛腩用溫水沖洗干凈。

4. 另起鍋，倒入適量食用油，油熱后放入冰糖，小火炒至冰糖融化并變成焦糖色，放入牛腩塊翻炒上色。

5. 加入姜片、蒜末、八角、桂皮、香葉炒出香味，再放入洋蔥塊和番茄塊翻炒均勻，炒出番茄汁。

6. 加入適量清水，沒(méi)過(guò)牛腩，放入1勺料酒、2勺生抽、1勺老抽，大火燒開(kāi)后轉(zhuǎn)小火燉煮1 - 1.5小時(shí)，直到牛腩軟爛。

7. 放入泡軟的腐竹段，繼續(xù)燉煮10 - 15分鐘，加入適量鹽調(diào)味，大火收汁即可。
